A knife with a hardness of HRC 63±1 made of stainless steel powder alloy.
Steel is cut by wire-cut electric discharge machining after vacuum quenching.
In that method, the electric discharge from the wire acts like a jigsaw, and
there is almost no loss due to processing.
The knives after cutting are all handmade by Sakai's top-class sharpeners, and
the perfect knife is completed.
